- 1 cups all-purpose flour
- 2 tsp baking powder
- 1.5 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 2 cups sugar
- 4 eggs
- 1.5 cups oil (such as canola)
- 2 cups grated raw carrot (about 7 oz)
- 8.5 oz package crushed pineapple (drained)
- 1 cup chopped nuts (walnuts suggested)
- 1.5 cups sweetened flaked coconut
- (optional) golden raisins
- Grease and flour one 3"x9" pan or three 3" cake rounds. Pre-heat oven to 350 F.
- Combine sugar, oil, and eggs. Sift dry ingredients and combine with sugar mixture. Add carrots, pineapple, and nuts.
- Pour into cake pan(s). Bake for 35-40 minutes until cake is done.
