- 1 cup chopped almonds
- 1/3 cup sugar
- 2 cups flour
- 1 cup (2 sticks) butter, softened
- 1 tsp vanilla sugar
- pinch of salt
- Mix the flour, sugar, salt, vanilla sugar. Then mix in the butter and knead until it's all nicely blended. Then mix in the almonds.
- Take a small chunk out (about or a little more than a tbsp) and shape them into wee little croissants.
- Set the oven to 350 F and as soon as they've been there for 5 mins start checking, they need to come out of the oven at the first sign of that golden baked sheen, or just before -- trust me, even if you think the dough is still soft, this stuff needs to be baked the minimal amount possible without being raw, so that it dissolves in your mouth like fairy dust when you eat them.
- Once they're out, dust them with caster sugar and cool.
